It’s sort of funny, becoming an adult.
It’s like life just layers on all these responsibilities little by little until one day you stop and suddenly you feel like you’re wearing a closet-full of coats. You’re just layered up like you’re going to face the blizzard of the century and all you really want to do is not be wearing all those jackets, to just lay instead in the sun somewhere warm, with no jackets on at all.
Eventually, the cold eases up and you can loosen up the scarf, peel off a layer or two that isn’t actually all that necessary, and just breathe a little. Everything starts to feel easier when you’re not bundled up so tightly, and you can focus on the important things–like pancakes.
- 1 banana
- 2 eggs
- 1/2 cup almond flour
- pinch of sea salt
- 1/2 tsp vanilla extract
- dash of cinnamon
- Blend banana, eggs, and almond flour together until smooth with a pinch of salt, vanilla extract, and a shake of cinnamon.
- Heat cast iron, add butter or coconut oil, and pour pancakes. Cook until you see bubbles rise to the surface, flip, and continue cooking on the other side for 2-3 minutes. Serve with extra banana slices, berries, and warm maple syrup.
