I've posted this paleo CRUSTLESS PUMPKIN PIE πŸ₯§ I've posted this paleo CRUSTLESS PUMPKIN PIE πŸ₯§ 3 years in a row now, no shame! It's one of my favorites πŸ˜‹

Here's how it goes: 

1 can unsweetened pumpkin
ΒΎ cup full fat coconut milk
ΒΌ cup room temperature water
1 tablespoon gelatin
2.5 tablespoons unsweetened almond butter
Sweetener (monkfruit, stevia, maple syrup, etc) 
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
ΒΌ teaspoon salt
Optional: scoop of your favorite vanilla protein powder 

Pour water into a bowl and sprinkle the gelatin over top. Allow to bloom for about 1 minute.
Add coconut milk to a pot and warm over low heat. Once warm, whisk in the "bloomed" gelatin, allowing to dissolve completely. Then, mix in the remaining ingredients and stir to combine.
Transfer the mix to blender and blend until smooth (30 seconds – 1 minute)
Pour mixture into small cups or ramekins and place in the refrigerator for at least one hour to set.
Once set, top with whipped cream/whipped coconut cream, and pecans, if desired.

I just found funky pincha in my practice so I held that one for approximately 1 second πŸ˜‰ It's a work in progress and I'm ok with that bc that variation used to feel impossible for me.

Turns out it IS possible, just took some patience and practice!
