Pickled Watermelon Rind [Video]
I’ve been making these watermelon rind pickles all summer long and I’m obsessed.
They’re a little sweet, a little tangy, and the chili flakes give them the perfect kick of heat π₯
I love them in a salad – they’re the perfect crunchy, tangy addition in my opinion. You can also just have them straight out of the jar for a little snacky snack.
Healthy, Delicious, and (Almost) Zero Waste!
We all know how good apple cider vinegar is for us, so these pickles are a great way to incorporate those health benefits.
PLUS, watermelon rind is something we typically throw out, so turning it into pickles is a win for the environment!
We won’t be using the hard, dark green skin which is why these are “Almost Zero Waste.” But you can always compost that part (which is what I do with my handy dandy composter).

Watermelon Rind Pickles [Video]
Ingredients
- About 3.5 cups watermelon rind (dark green skin removed)
- 1/2 cup warm water
- 1/2 cup apple cider vinegar
- Juice from 1/2 a lemon
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon chili flakes
Instructions
- Peel the hard, dark green skin from the watermelon rind and discard.
- Slice the watermelon rind into small pieces and add to a glass jar
- To a bowl, add honey, warm water, salt, chili flakes, apple cider vinegar, and lemon juice. Stir to combine and pour over the watermelon rind. (you'll want to try to cover the rind, so push them down and add an extra splash of vinegar, if necessary)
- Cover and refrigerate for 24 hours.
- Enjoy in a salad or by themselves as a snack!
