Soft Boiled Egg and Smoked Salmon Breakfast Bowl

A lot of times people stuff smoked salmon between two bagel slices. No judgment if that’s your thing, but I really feel like all that bagel covers up the deliciousness of the salmon.
I like to keep my smoked salmon out there in the open, in beautiful breakfast bowl form. Here’s my rundown:
Step 1: Nestle smoked salmon onto to some crispy fried potatoes covered in everything-but-the-bagel spice mix 😍
Step 2: Layer on some greens, tomatoes, and creamy avocado slices 🥑
Step 3: Top all that goodness off with a perfectly cooked, organic soft boiled egg! 👍🏽

This breakfast is easy enough to make for yourself on a lazy Saturday, and jusssttt *sophisticated* enough to have on a special breakfast occasion–like if you’re having guests in town for Thanksgiving!
Get good eggs with that no-joke yolk, y’all
If you know me, you know I love a good egg. In my eyes, a good egg comes from a healthy, happy chicken raised the right way.
Pete & Gerry’s organic eggs come from small family farms that give their hens a good chicken life—clean, organic feed and the space to roam around indoors and outdoors.
One way you can spot a good egg is by the yolk. And these yolks are no joke, y’all. (I mean, do you see that golden goodness??)
So bright and sunny! I really like to celebrate the yolk so I soft boiled the eggs for this breakfast bowl. Soft boiling sets the whites but keeps the yolks nice and runny.
(You can also soft boil a batch of eggs and keep them on hand in the fridge for whenever the craving strikes!)
That beautiful soft boiled egg goes so well with these pan-fried potatoes. Which are BOMB.
I mean, come on. Potatoes fried up in ghee and seasoned with everything-but-the-bagel spice mix?? They’re soft and tender on the inside, and crispy on the outside.
They’re perfect.
And together with the smoked salmon and luscious egg they make a simple breakfast bowl feel like a million bucks.
You could leave your bowl at that, and it would be amazing. But if you really want to step your breakfast game up you can whip up this creamy dill sauce to drizzle over everything!
I included options to make the sauce with or without dairy, depending on your dietary needs and preference.
And bonus! If you take the dairy-free sauce option, this bowl is Whole30 approved.

Soft Boiled Egg and Smoked Salmon Breakfast Bowl
Ingredients
- 2 Pete & Gerry’s Organic Eggs
- 4 ounces wild caught smoked salmon
- 3 cups Yukon Gold potatoes, scrubbed and cut into small cubes
- 2 tablespoons ghee
- 1 tablespoon everything but the bagel spice mix
- Salt
For the creamy dill sauce
- ¼ cup Greek yogurt (sub coconut cream for dairy free)
- Squeeze of lemon juice
- 1 tablespoon fresh dill, finely chopped
To Serve
- Greens, sliced cherry tomatoes, sliced avocado
