Pumpkin and Sage Risotto

Pumpkin and Sage Risotto | Reclaiming Yesterday

[I created this cozy Pumpkin and Sage Risotto for Earth Fare!]

It took me way too long to try making risotto. For some reason, I thought it would be really difficult.

Or I thought it was really easy to mess up.

But this Pumpkin and Sage Risotto taught me a lesson. When you don’t try something because you’re afraid it will be too hard, or you’re afraid you’ll mess up, you might end up missing out on something really delicious.

Avocado and Apple Tuna Salad

Tasty and healthy Avocado and Apple Tuna Salad | Reclaiming Yesterday

I’ve had mixed feelings about this Fall. On the one hand, I’ve been LOVING the unseasonably warm temperatures we’ve had. And on the other hand I can’t help but to think 80 degrees in November isn’t right.

Yummy snacks such as these bacon broccoli tater tots. Dunked in maple mustard. And with that combination, everyone wins, and nobody loses. (Isn’t that more fun?) Continue reading

Gluten Free Apple Pie Pancakes

I always liked helping out in the kitchen as a kid, but the first recipe I ever made on my own was an apple pie for Thanksgiving. I remember so well the feelings that I had while I made it. Cutting the crisp apples, smelling the warm spices, peeking into the oven as it baked.

Classic apple pie has a lot of ingredients that I still have to avoid. But I think that these pancakes do a pretty good job of capturing the essence of apple pie.

And fulfilling everyone’s dream of having dessert for breakfast!  Continue reading
