Chocolate Mint Fudge CBD Oil Bites (Paleo)
I’ve recently been experimenting with CBD oil to help relieve my anxiety and insomnia. The oil is easy enough to take on its own, but I was forgetting to take it….so I made these fudge bites to help me remember π
The chocolate mint fudge bites can definitely be made without CBD oil too and they’ll be just as yummy – just without the benefits of CBD.
Such a simple treat that I love to keep in the freezer and just grab one or two when I’m in the mood for something sweet (and healthy)!
Chocolate Mint Fudge CBD Oil Bites (Paleo)

Ingredients
- 3/4 cup pitted dates
- 1/2 cup unsweetened almond butter
- 2 tablespoons melted cacao butter
- 1/4 cup unsweetened cacao powder
- 1/2 teaspoon chocolate mint CBD oil (I used Green Mountain brand)
- 1/4 teaspoon salt (more or less depending on saltiness of your almond butter - start with less and add more)
- About 10-15 drops mint extract (or a few drops of peppermint essential oil)
Instructions
- Add dates to a bowl and pour over about 1/4 cup of hot water. Allow the dates to soak for at least 5 minutes.
- Drain dates from the water (reserve the water in case you need to thin out the fudge a little) and add all of the ingredients to a food processor. Pulse until you form a thick paste, scraping down the sides as needed.
- Taste and adjust by adding more mint extract or salt.
- Using a small spatula, scrape the fudge into a parchment paper lined dish (I used a glass food storage container) and flatten it out the best you can with a spatula
- Place the fudge in the freezer for at least 20 minutes. Remove the fudge by pulling the parchment paper up, and slice into squares. Store in the fridge or freezer!
