3 ingredient paleo pancakes

For the love of a paleo pancake

When I switched up my diet a few years ago, I started eating less sweet breakfasts. But sometimes you just want a good stack of pancakes, ya know? 

Luckily, you can make a healthy pancake with just a few simple ingredients! 

All you need for this pancake recipe is: 

  • 2 eggs
  • A ripe banana 
  • 1/2 cup gluten free flour (I used almond flour here, but coconut flour should work too. You may just need slightly less than 1/2 cup)

Step 1: Make the pancake batter

Simply toss all of your ingredients into a blender or food processor (along with the optional salt, cinnamon, and vanilla extract) and blend until smooth.

If you don’t feel like dealing with the blender, you can just mash the banana with a fork and then whisk the eggs and the flour in. (I personally prefer a very smooth batter so I use the blender.) 

Step 2: Pour your pancake batter

Heat a cast iron skillet or griddle (or another non-toxic pan) to medium-high heat and add some butter, ghee, or coconut oil. Then, cook your pancakes!

(I have been using my Lodge cast iron skillet EVERY DAY for years and love it! Once it’s seasoned it’s practically non-stick and adds some additional iron to your food!)

When pouring the pancakes I like to use a 1/4 cup measuring cup to get a consistent size. Wait until bubbles start to rise to the surface, and flip. 

Step 3: Top your paleo pancakes and EAT!

Once your pancakes are golden brown and perfect, stack them up and top with whatever makes your heart happy. 

Here are some delicious suggestions: 

  • Real maple syrup 
  • Fresh fruit
  • Nut butter
  • A little chocolate chip action 
  • coconut butter or coconut flakes

3 Ingredient Paleo Pancake variations 

  • You can bump up the protein in these pancakes by adding a scoop or two of collagen peptides, or your favorite protein powder. 
  • You can thin the batter out a little with your favorite non-dairy milk and make larger, thinner pancakes, AKA crepes. (Here’s a crepe recipe that I love using chickpea flour.)
  • You can replace the banana with about 1/2 cup cooked sweet potato – also really deish.

  2. Hi, I am a first timer. Loved this recipe. Could you help me make this into a 4 serving recipe? Mine didn’t come out right.
    So happy to see simple, healthy, single serving recipes.

    • Hi C.J.! So I would suggest making the batter in 2 batches to be sure everything blends correctly. So, for 4 people, I would do 2 bananas, 4 eggs, 1 cup almond flour, 1 tsp vanilla extract, a generous pinch of salt, and a dash of cinnamon. I’d blend that up first and then do the same thing again, giving you enough for 4 people! Hope that helps! 🙂

  3. I found it to be way to thick as made per directions with food processor. Started over using 1/8 tsp baking powder and a couple Tbsp coconut flour, just enough to get desired consistency. Also added ~ 1/8 tsp vanilla

    • Thanks for the feedback! I think depending on size of egg/banana and brand of almond flour there will be some variance. If it’s too thick you can also thin the batter out a bit with some liquid so you don’t have to waste any ingredients. 😊
